Oreo Brownie



World's favorite cookie in brownie!!!! Sounds so yumm :D .... It's my elder son's 16th birthday & I decided to make Oreo brownie & cupcakes for him, as he loves Oreo cookies. He had class whole day so I had to save them from my lil one till his brother is back :D.... & then when they finally had their favorite brownie, I enjoyed cute smiles on their faces while they polished off almost all brownies :D

Ingredients 
1 cup plain flour (maida)
2 tsp cocoa powder (preferably unsweetened)
1 1/2 tbsp dark chocolate
3/4 cup powdered sugar
1/2 tsp soda bi-carb
1/2 tsp baking powder
100 gm or 7 tbsp vanilla yogurt 
5 tbsp melted butter
1/2 tsp vanilla essence
6 tbsp milk
20 Oreos separated 
(20 disks of cream side & 20 disks crushed)

Method
Pre-heat the oven to 180˚ C
Sieve together flour, Cocoa, soda & baking powder.
Melt dark chocolate & butter over double boiler
Add sugar & mix well. Add yogurt & mix really well.
Mix 3/4th of crushed Oreos with flour so they wont settle down after baking.
Fold flour & milk alternately, making sure to end with flour.
There should be no lumps.
Pour 1/2 of the brownie batter into a greased & dusted baking pan.
Arrange cream Oreo disks, cream side up, & pour rest of the brownie batter.
Sprinkle remaining crushed Oreos.
Place in the oven & bake for 25 to 30 minutes.
Once ready, cut into 2" x 2" pieces & Enjoy :)

Tips
* These brownies are little on drier side 'cause of biscuits, so if you want you can pour chocolate sauce over it before serving.
* Cool the brownie completely before cutting.
* You can use curds in place of yogurt.
* Serve these brownies with a glass of milk, everyone will love them :)

Toblerone & Almond Brownie



My love affair with brownies is no secret anymore. Here I'm introducing the latest one, that even my husband loves ;)
Moist, chewy, & so delicious! These will be favourite of anyone who loves Toblerone & nuts & will be gone before you know it !!

Ingredients 
1 cup plain flour (maida)
2 tsp cocoa powder (preferably unsweetened)
1 1/2 tbsp dark chocolate
1/2 + 1/4 cup chopped Toblerone
1 tsp coffee powder
3/4 cup powdered sugar
1/2 tsp soda bi-carb
1/2 tsp baking powder
6 tbsp curds (dahi)
5 tbsp melted butter
1/2 cup chopped roasted almonds
1/2 tsp vanilla essence
6 tbsp milk

Method
Pre-heat the oven to 180˚ C
Sieve together flour, Cocoa, Coffee, soda & baking powder.
Melt dark chocolate + 1/2 cup Toblerone & butter over double boiler
Add sugar & mix well. Add curds & vanilla & mix really well.
Mix almonds with flour so they wont settle down after baking.
Fold flour & milk alternately, making sure to end with flour.
There should be no lumps.
Pour the brownie batter into a greased and dusted baking pan.
Sprinkle 1/4 cup of chopped Toblerone.
Place in the oven and bake for 25 to 30 minutes.

Tips
* You can omit coffee if you want.
* I used Toblerone minis here. You can use whatever flavour of Toblerone you want but dark will taste best. (I ate up all dark ones & was left with milk & white so had to used them only).
* As usual don't beat the batter, just fold it.

Caramel Brownie



Brownie time again & here is another flavour of it. I was only going to eat a bite, but then I had another bite & another bite. Thankfully I have two kids & a hubby who also loved it & I was saved from having to do extra workout ;)

Ingredients 
Brownie
1 cup plain flour (maida)
2 tsp cocoa powder (preferably unsweetened)
1 1/2 tbsp dark chocolate
3/4 cup powdered sugar
1/2 tsp soda bi-carb
1/2 tsp baking powder
6 tbsp curds (dahi)
5 tbsp melted butter
1/2 cup chopped walnuts (akhrot)
1/2 tsp vanilla essence
6 tbsp milk
Caramel toffees according to your liking

Caramel Sauce
1/2 cup Sweetened Condensed milk 
1/4 cup butter
1/4 cup brown sugar
1 tsp dark chocolate (optional)

Method
Brownie
Pre-heat the oven to 180˚ C
Sieve together flour, Cocoa, soda & baking powder.
Melt dark chocolate & butter over double boiler
Add sugar & mix well. Add curds & mix really well.
Mix walnuts with flour so it wont settle down after baking.
Fold flour & milk alternately, making sure to end with flour.
There should be no lumps.
Pour 1/2 of the brownie batter into a greased and dusted baking pan.
Arrange caramel toffees & pour rest of the brownie batter.
Place in the oven and bake for 25 to 30 minutes.
Once ready, drip caramel sauce and cut into 2" x 2" pieces. 
Enjoy :)

Caramel Sauce
Melt brown sugar & butter in a pan and simmer on a low heat until the two become a smooth liquid.
Add condensed milk & raise the temperature very gently until it starts to simmer. 
Keep the temperature low & stir continuously until brown. Add chocolate if using.
This should take around 20 minutes.

Tips
* The caramel toffees inside & caramel sauce outside makes the brownies little on sweeter side, so reduce the sugar amount in brownie recipe if you prefer less sweet.
* Don't use old caramel toffees as they become hard & does not melt while baking.
* You can store any left over caramel sauce in a PLASTIC container in refrigerator for up to 2 weeks. 
* If the caramel thickens then warm it up, adding little milk till you get the consistency required.
* Always remember caramel burns quickly so be alert when working with it.
* If you don't have caramel toffees then make some extra caramel & pour that extra on a parchment paper to firm up. Place in refrigerator. Cut pieces & use. Just remember to thicken this extra caramel so that it firms up faster.

Kit Kat Brownie


My love for brownies keeps on giving me ideas... Latest is Kit Kat flavour & believe me 20 pieces just vanished in a day... I cud only get one piece to taste ... Will be getting more Kit Kats soon :)

Ingredients
1 1/2cup plain flour (maida)
3 tsp cocoa powder (preferably unsweetened)
2 tbsp dark chocolate
1 cup powdered sugar
3/4 tsp soda bi-carb
3/4 tsp baking powder
8 tbsp curds
5 tbsp melted butter
1/2 cup chopped walnuts
3/4 tsp vanilla essence
6 tbsp milk
12 to 16 KIT KAT fingers

Method
Pre-heat the oven to 180˚C
Sieve together flour, Cocoa, soda & baking powder.
Melt dark chocolate & butter over double boiler
Add sugar & mix well. Add curds & mix really well.
Mix walnuts with flour so it won’t settle down after baking.
Fold flour & milk alternately, making sure to end with flour.
There should be no lumps.

How to proceed
Take a greased and dusted baking pan.
Spread half of the brownie batter in baking pan.
Arrange KIT KAT fingers on the batter.
Spread remaining batter.
Sprinkle with crushed KIT KAT topping to generously cover the batter.
Bake for 25 to 30 minutes.
Cool and cut into 2" x 2" pieces.
Enjoy :)

Tips
* Number of KIT KAT fingers you use depends on your taste.
* Cool the brownie completely before cutting.
* VARIATION:
If you want to serve regular brownie as KIT KAT brownie -
For icing: Heat cream. Pour over chocolate chips to melt. Stir to combine.
Spread over surface of the brownies. Sprinkle with KIT KAT topping to generously cover.
Refrigerate before cutting.

Orange Brownie





I always loved orange flavors in my Chocolates so added it to my brownies too...enjoy :)

Ingredients
1 cup plain flour (maida)
2 tsp cocoa powder (preferably unsweetened)
1 1/2 tbsp dark chocolate
3/4 cup powdered sugar
1/2 tsp soda bi-carb
1/2 tsp baking powder
6 tbsp curds
5 tbsp melted butter
1/2 cup chopped walnuts
1/2 tsp vanilla essence
2 tsp orange rind
6 tbsp orange juice

Method
Pre-heat the oven to 180˚C
Sieve together flour, Cocoa, soda & baking powder.
Melt dark chocolate & butter over double boiler
Add sugar & mix well. Add curds & mix really well.
Add orange rind. Mix well.
Mix walnuts with flour so it won’t settle down after baking.
Fold flour & juice alternately, making sure to end with flour.
There should be no lumps.
Pour brownie mixture into a greased and dusted baking pan.
Place in the oven and bake for 25 to 30 minutes.
Cool and cut into 2" x 2" pieces.
Enjoy :)

Tips
Cool the brownie completely before cutting.

Cream Cheese Brownie



I just can’t get enough of Brownies & then there are so many variations of this much loved dessert which is a cross between a cake & a cookie in texture. So here is one of many more to come :)

Ingredients
For Brownie

1 cup plain flour (maida)
2 tsp cocoa powder (preferably unsweetened)
1 1/2 tbsp dark chocolate
3/4 cup powdered sugar
1/2 tsp soda bi-carb
1/2 tsp baking powder
6 tbsp curds (dahi)
5 tbsp milk
5 tbsp melted butter
1/2 cup chopped walnuts (akhrot)
1/2 tsp vanilla essence

For Cream Cheese
3/4 cup fresh cottage cheese
1 tsp butter
1 cup sugar (according to taste)
1/2 tsp vanilla

Method
For Brownie

Pre-heat the oven to 180˚ C
Sieve together flour, Cocoa, soda & baking powder.
Melt dark chocolate & butter over double boiler
Add sugar & mix well. Add curds & mix really well.
Mix walnuts with flour so it wont settle down after baking.
Fold milk & flour alternately but end with flour. Make sure there are no lumps.

For Cream Cheese
Churn all ingredients in a mixer.

How to Proceed
Pour brownie mixture into a greased and dusted baking pan.
Pour cream cheese mixture over brownie mixture.
Run a knife or wooden skewer back and forth through the two batters until you have a marble effect.
Place in the oven and bake for 25 to 30 minutes.
Cool and cut into 2" x 2" pieces.
Enjoy With Vanilla ice cream or just like that :)

Tips
You can layer the two mixtures alternately & end with cheese mixture.
Cool the brownie completely before cutting.

Brownies & More...


Yummy dessert that can be made in jiffy & believe me you will just love it :)

#Oreo Cream Shots
Ingredients
(serves 4)
I cup whipped cream
1/2 cup powder sugar (according to taste)
Few Oreos crushed (depends how dark you want your cream)
Oreo or glazed cherries for garnish
Brownies

Method
Mix sugar, whipped cream & crushed Oreos.
Fill it in a piping bag with a star nozzle & refrigerate.
Take four shot glasses or whatever type of bowls/glasses you want to make it in.
Press brownie pieces in the glasses.
Next pipe the cream over the brownies.
Again put another piece of brownie, but don't press it too hard.
Now again pipe the cream and garnish with glazed cherry or a piece of Oreo.
Refrigerate for few hrs.
Serve chilled.


#Coffee Cream Shots
Ingredients (serves 4)
1 cup whipped cream
1/2 cup powder sugar (according to taste)
1/2 tsp vanilla
1 tsp instant coffee powder
1/2 tsp drinking chocolate to sprinkle
Few chocolate pieces for garnish
Brownies

Method
Mix sugar, whipped cream & coffee.
Fill it in a piping bag with a star nozzle & refrigerate.
Take four shot glasses or whatever type of bowls/glasses you want to make it in.
Press brownie pieces in the glasses.
Next pipe the coffee cream over the brownies.
Again put another piece of brownie, but don't press it too hard.
Now again pipe the cream and garnish with chocolate pieces & sprinkle drinking chocolate powder.
Refrigerate for few hrs.
Serve chilled.

Tips
If you are using readymade whipped cream, please check if it already has sugar in it, otherwise you will end up with a very very sweet dessert.
If you have a crumbled brownie, you can still use it in this.
Oreos give dark colour to your cream so add according to your liking.
If you like strong coffee flavour then you can add more coffee to cream.
MOST IMPORTANT- taste the creams before layering so you can adjust the taste accordingly.
If you don't have brownies (& you are too lazy to bake them), you can easily make this with any other chocolate cake ;)
