Strawberry Cupcakes With Strawberry Cream Cheese Frosting



Red, juicy and conically shaped, the strawberry is a member of the rose family and has grown wild for centuries. They are very low in Saturated Fat, Cholesterol & Sodium. They are also a good source of Folate, Potassium, Dietary Fiber, Vitamin C & Manganese. Here's a recipe that you can indulge in without feeling guilty of eating too much butter or oil. Cream Cheese frosting is really very yummy & it's without any butter.

Ingredients
For Cupcakes
1 1/4 cup maida
1 cup strawberry purée
3/4 cup Soy-milk
1 tsp lemon juice
1 1/4 cup sugar
1 tsp baking soda
1/4 tsp baking soda
1/4 tsp salt
1 tbsp oil
1 tsp vanilla

For Cream Cheese Frosting
1 cup fresh cottage cheese
2 cup sugar (according to taste)
1/4 cup strawberry purée
2 tbsp fresh cream
1/2 tsp vanilla

For Garnish
1/2 cup chopped strawberries

Method
For Cupcakes

Preheat your oven to 180˚C
First make the strawberry milk by combining Soy-milk, sugar & strawberry purée. Stir & set aside.
Sieve together maida, baking soda, baking powder & salt.
Whisk together the strawberry milk, oil, lemon juice & vanilla.
Slowly add flour to milk & fold gently.
Spoon the batter into a cupcake tin & bake for 18-20 minutes, until a toothpick inserted comes out clean. Let the cupcakes cool before whipping up the frosting.

For Cream Cheese Frosting
Blend together cottage cheese, sugar, cream & vanilla.
Keep blending until a creamy texture is obtained.
Add purée & blend again. You will get a beautiful pink colour.
Keep refrigerated till needed.
Once cupcakes cool downs, pipe the frosting & garnish with sliced strawberries.

Tips
Colour of cupcakes is slightly pinkish, so they might look under baked.
You can avoid adding strawberry purée to cupcake batter & can add strawberry chunks instead.
You can add strawberry chunks to frosting (in that case you will not be able to pipe frosting).
