Kids just finish these off in no time :)
Ingredients:
1 cup plain
flour (maida)
2 tbsp oats
2 tbsp
cornflour
7-8
strawberries chopped
1 ripe
banana
1 tsp
baking soda
1 tsp
baking powder
1/3rd
cup olive oil
3/4 cup
sugar
2 tbsp of
curd
Method:
Sieve
flours, baking powder & soda
Puree
banana & oats in the mixer.
Mix sugar
& olive oil well.
Add banana
& oats to olive oil mixture.
Mix strawberries
with little flour & keep aside.
Add curds
to mixture & mix well.
Add flour
& strawberries to the mixture & mix. Do not mix too much or the muffins
will not be soft.
Add little
milk if you find mixture to be too thick. This batter is supposed to be little
thick then normal cake batter.
Fill the
muffin trays half.
Bake for 35
to 40 mins at 180°C or until the tooth pick comes out clean.
Tips:
If you are
out of Oats & Cornflour, you can increase the Plain Flour by ¼ cup.
Can try with melted butter instead of olive oil.
